Apple Spice

GLUTEN-FREE + GUT-FRIENDLY

GRANOLA

  • 140g / 1+3/4 cups rolled oats (gluten-free)

  • 120g / 1/2 cup apple sauce (unsweetened)

  • 135g / 1 cup activated NUTS

  • 100g / 1/2 cup healthy FAT (ghee, coconut oil, etc.)

  • 30g / 1 cup dried apple (unsweetened)

  • 40g / 1/4 cup maple syrup (or coconut sugar)

  • 30g / 1/4 cup any seeds (sprouted/soaked) (OR                                                                shredded coconut)

  • 2 tsp mixed spices (1 tsp cinnamon + 1/2 tsp clove +                                      1/4 tsp nutmeg + 1/4 tsp cardamom)

  • (optional) 35g / 1/4 cup candied ginger 

  • (optional) 1/4 tsp sea salt / natural salt

  • (optional) 1 tsp vanilla extract / paste

  1. Mix together the applesauce, maple syrup, salt, vanilla, and spices, then cook over medium heat until half the water content has evaporated off.

  2. Add the coconut oil, mix well, then add all remaining ingredients except the dried apple. 

  3. Spread this mixture evenly over a large baking pan, then bake at 325F / 163 C for 20 minutes.

  4. Stir the granola to ensure even baking, turn the pan 180 degrees, then bake for an additional 10 minutes. Turn off the oven and let the granola cool inside, leaving the oven door open slightly.

  5. Once the granola has cooled, mix in the dried apple chunks, then store in an air-tight container until ready to eat. Works great over non-dairy yogurt, as a breakfast cereal, or just as a snack on its own.

Yield:  420g / 4.5 cups
